Abstract

Objective: to study the microbial contamination of hen's eggs. Method: Descriptive documentary. Conclusion: This study concludes that the microbiological safety of commercial eggs depends on a complex interaction between shell structural resistance, natural antimicrobial defences, genetic and environmental factors. The importance of reinforcing shell integrity through genetic selection and the use of antimicrobial proteins is highlighted, as well as the promise of antimicrobial coatings, although their implementation requires further optimisation.
