Beef liver and fine herbs edible paper: Antioxidants for circulatory health

Abstract

The overall objective of this study was to describe the edible role of beef liver and fine herbs as antioxidants for circulatory health. The method was designed to obtain an edible biofilm to be consumed as an alternative food supplement to commercial snacks. The proposal has the advantage of being a food that provides protein, iron and phytochemicals with high antioxidant activity and beneficial effects on circulatory function. All stages were developed under strict food safety protocols. It is concluded that the optimized mixture was the combination of beef liver and gellan gum, subjected to a dehydration process. It resulted in a product with an attractive color and a pleasant aroma that was highly valued by the evaluators. The beef liver food paper with fine herbs has a high quality protein content and low fat content.
