Use and utilization of Moringa Oleifera in university areas

The objective of this research is to evaluate the acceptability and nutritional quality of a protein drink made from Moringa oleífera leaves. Regarding the methodology used, first, the raw material was characterized and then three samples of the drink were formulated with various proportions of Moringa oleifera leaves, water and preservative additives. In the results, a sensory analysis was carried out to identify the sample with the highest acceptance within the panel, resulting in the one with the lowest concentration being the one with the highest acceptance. The nutritional value of the drink obtained with a commercial drink was compared. As a conclusion, it can be concluded that the protein drink made from Moringa oleifera leaves meets the nutritional requirements, since Moringa provides a large amount of vitamins, minerals and essential amino acids for human nutrition and health, while commercial drink is a refreshing protein drink.
